Spicy Shrimp Tacos with Mango Salsa and Avocado Crema

Advertisements

These tacos are so easy to make and allow for a lot of variation by several options for ingredient swaps.

See some examples below:

Keep the leftover avocado crema to dress salads, use as a dip, or even spread on a sandwich. And I don’t think you can have too much salsa. Just make sure you have plenty of chips on hand!

Also, goes without saying, these tacos should obviously be paired with margaritas.

Ingredients

  • Mango Salsa
  • 2 Mangos

  • 1 16 oz can Black Beans

  • 1/2 Red Onion

  • 1-2 Jalapenos

  • 1 Lime, juiced

  • 1 clove Garlic, pressed

  • 1 bunch Cilantro

  • Avocado Crema
  • 1 Avocado

  • 1/2 cup Sour Cream

  • 1 bunch Cilantro

  • 1 Lime, juiced

  • Shrimp Tacos
  • 1 lb Shrimp, raw

  • 1 tsp Cajun Seasoning (or blend of paprika, garlic and onion powder)

  • 1 tsp Chili Powder

  • 1/2 tsp Cumin

  • 6 Corn Tortillas

Directions

  • Combine all ingredients for the salsa. You can make it as chunky or finely chopped to your liking, as long as it is all uniform. I like to keep each ingredient the size of the black beans. Add salt to taste. Set aside and let the flavors meld together.
  • Put all the ingredients for the avocado crema in a food processor or blender. Add salt and pepper to taste. Set aside
  • Peel and devein the shrimp, rinse with water and pat dry. Place in a bowl and season with cajun spice, chili powder and cumin. Make sure they are evenly coated with the spices.
  • Heat a large skillet on medium high and add a few tbs of olive oil. Wait until the skillet is very hot to add the shrimp (test it by flicking a couple droplets of water and see if they sizzle) The shrimp will only take a few minutes – remove from heat once they are pink and no longer translucent.
  • Assemble your tortillas, salsa and crema. Garnish with some chopped cilantro and a few lime wedges. Enjoy!
