- 4 Ripened Bananas Mashed
- 3/4 c Buttermilk
- 2 c Sugar
- 1 tsp Vanilla
- 1 tsp Cinnamon Ground
- 1/2 c Butter Room Temperature
- 1 Egg
- 1 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 2 1/2 c Flour
- Cooking Spray To grease waffle maker
In a large bowl, whisk together flour, salt, baking soda, and cinnamon.
Using a stand mixer or handheld beaters, cream together butter and sugar until light and creamy, about 2 minutes. Add egg and mix until combined. Add vanilla, mashed bananas, and buttermilk and beat on medium speed until well-combined. Turn the mixer to a low setting, and gradually add in flour mixture. Mix until no flour pockets remain.
Turn on mini waffle maker. Once heated, spray the inside with non-stick cooking spray. Add two tbs of the batter to the waffle maker and close. Open waffle maker when it indicates the waffle has finished cooking. Remove the waffle with a fork and set on plate to cook (or eat immediately ha).
Repeat step 3 (except for turning on the waffle maker...obvi) until no batter remains or until desired number of waffles are made.
