Banana Bread Baking: America’s Official Quarantine Pastime

Banana bread is a staple in many American’s baking repertoire. And I am pretty sure that banana bread baking (and consuming) has significantly increased in the time of quarantine. Many people have a specific banana bread recipe they grew up eating, and I definitely fall into this category. My mom always made banana bread using a recipe from a cookbook comprised of various recipes submitted by members of my grandparent’s church. I know that sounds complicated, but it’s really not. You know the type of recipe book I am talking about. The kind of cookbook that is spiral bound and has food stains on various pages from spills attempting to make each recipe.

Banana Bread Waffles: A Childhood Treat with Australian Flair

Although I grew up eating banana bread, my love for this fluffy, fruit bread was reinvigorated when I lived in Australia. Down under, you can buy slices of banana bread at most coffee shops. They toast it on each side and slather it with butter. I wanted to recreate this tea time treat by transforming the banana bread recipe I grew up with into waffles, specifically mini waffles. Mini waffles are just the right size snack for a single lady like myself. And there you have it ladies and gentlemen, the story behind these Banana Bread Waffles.

Ingredients

  • 4 Ripened Bananas Mashed
  • 3/4 c Buttermilk
  • 2 c Sugar
  • 1 tsp Vanilla
  • 1 tsp Cinnamon Ground
  • 1/2 c Butter Room Temperature
  • 1 Egg
  • 1 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 1/2 c Flour
  • Cooking Spray To grease waffle maker

Instructions

  • In a large bowl, whisk together flour, salt, baking soda, and cinnamon.
  • Using a stand mixer or handheld beaters, cream together butter and sugar until light and creamy, about 2 minutes. Add egg and mix until combined. Add vanilla, mashed bananas, and buttermilk and beat on medium speed until well-combined. Turn the mixer to a low setting, and gradually add in flour mixture. Mix until no flour pockets remain.
  • Turn on mini waffle maker. Once heated, spray the inside with non-stick cooking spray. Add two tbs of the batter to the waffle maker and close. Open waffle maker when it indicates the waffle has finished cooking. Remove the waffle with a fork and set on plate to cook (or eat immediately ha).
  • Repeat step 3 (except for turning on the waffle maker…obvi) until no batter remains or until desired number of waffles are made.
