Life is always easier when you can make a healthy, tasty dinner quickly with little effort and using items that you already have in your pantry. This Dill and Lemon Crumb-Topped Cod is super simple to make. Its crumb topping gives it the crunch and taste of fried fish but because it is baked, it has significantly less calories.
Using Pantry Staples for Your Dill and Lemon Crumb-Topped Cod
- Croutons: I’m not a huge bread-eater, weird, I know. But I LOVE croutons. I mainly eat salads for the croutons, and always have a couple of bags of croutons shoved into my pantry. “What do croutons have to do with cod?” You may be asking. Well, I like to use croutons to make my bread crumbs for the cod topping.
- French Fried Onion Toppers: I am a big fan of those little French fried Onion Toppers that go on green bean casserole. You know what I’m talking about. They take green bean casserole from “just side dish” to the best dish at Thanksgiving, it my humble, controversial opinion. Anyway, I like to add these fried onion toppers to my salads and figured, why not add them to my crumb topping. Let me tell you, it was a fantastic idea.
- Leftover Herbs: Crumb topping for fish, or any meat really, loves fresh herbs like dill or parsley. I happened to have leftover dill so used that.
- Nuts: I love nut-crusted meats, like pecan-crusted chicken tenders, or even pretzels, like Auntie Ann’s Almond Pretzel, for that matter. Nuts add great texture and once they are baked, they release their natural oils and flavor, making them a great addition to your cod crumb. I always have various nuts in my pantry and just-so-happened to have sliced almonds on-hand.
- Zest: Seafood loves citrus, and cod is no exception. I add the zest from a lemon enhance the flavors of the cod and to brighten the dish.
